Fragrances are valued for their aromas, but they are fundamentally mixtures of chemicals, and that is the key to understanding their properties.

Aroma chemicals are very diverse, including hydrocarbons, alcohols, aldehydes and ketones, esters, phenols, nitriles and heterocyclics. Fragrances in liquid or gas form naturally behave according to the laws of physical chemistry. It is when they deviate from ideal behavior that interesting results occur.

Many fragrances are used in products such as emulsion and surfactant systems. The interaction of individual aroma molecules with the phases of the complete product is to a large extent determined by polarity as characterized by solubility parameters or the Effective Alkane Carbon Number.
