Recorded on: June 29, 2021

Presenter: Steve Herman, president of Diffusion LLC

This webinar was co-sponsored by the Society of Cosmetic Chemists (SCC).

Fragrances are valued for their aromas, but they are fundamentally mixtures of chemicals, and that is the key to understanding their properties.

Aroma chemicals are very diverse, including hydrocarbons, alcohols, aldehydes and ketones, esters, phenols, nitriles and heterocyclics. Fragrances in liquid or gas form naturally behave according to the laws of physical chemistry. It is when they deviate from ideal behavior that interesting results occur.

Many fragrances are used in products such as emulsion and surfactant systems. The interaction of individual aroma molecules with the phases of the complete product is to a large extent determined by polarity as characterized by solubility parameters or the Effective Alkane Carbon Number.

Learning Objectives:

  • The types of chemicals used to make fragrances
  • How the behavior of fragrance mixtures, either in liquid or gaseous form, can be explained by physical chemistry
  • How fragrances react with products such as emulsion and surfactant systems based on polarity
